Don’t you love it when you can whip something deliciously divine up in minutes from store cupboard ingredients!

These gorgeous little balls of bliss (mix of a snickers and bounty bar, I think!!) are filled with the goodness of nuts, dates, oats, cacao powder, chia seeds, coconut oil, honey and desiccated coconut…  perfect for grabbing a second or even a third guilt-free

Everyone loves these little bites in our house… I make a batch at least once a month… especially lovely for when friends pop over for a cuppa, and they are the perfect little snack any time of day!!

Coconut Peanut Date Cacao Balls

Ingredients

  • 125g Peanuts
  • 125g Pecans
  • 120g Peanut butter
  • 20 Medjool Dates seeded
  • 3 tbsp Coconut oil
  • 180g Rolled oats
  • 3 tbsp Cacao powder
  • 2 tbsp Chia seeds
  • 55g Honey
  • 35g Desiccated coconut or coconut flakes

Instructions

  1. Blitz the dates in a food processor until they turn into a sticky paste
  2. Add all other ingredients except 10g of the coconut and blend again until a sticky dough is formed
  3. Remove into a large mix bowl and mix well by hand to make sure everything is combined 
  4. Roll the mixture into 1-inch balls 
  5. Place the remaining 10g of coconut in a bowl and roll each ball in the coconut until completely covered
  6. Store them in an air-tight container in the fridge for up to 2 weeks
  7. Enjoy!
