I had to make something with the last of my beautiful homemade loaf… a super easy one for you today. No recipe as such. Here’s a brief description of how I made these luscious toasties.
The homemade bread was sliced and toasted under the grill in the oven until golden. I sautéed some chopped garlic in butter, added shiitake mushrooms and a few thyme sprigs, then a splash of white wine, salt, and pepper. I made a quickly whipped ricotta cheese with a pinch of salt, pepper, granulated garlic, and chilli flakes. Then lathered the ricotta onto the toast, added the garlicky mushrooms and more fresh thyme, chilli flakes, and gave it a final drizzle of EVOO. The homemade bread was sliced and toasted under the grill in the oven until golden then I slathered cream cheese on top. I sliced up fresh figs and arranged them on top with truffle salami, drizzled some truffle honey and thick balsamic on top, and finished with a sprinkling of pistachios.
