I had to make something with the last of my beautiful homemade loaf… a super easy one for you today.  No recipe as such. Here’s a brief description of how I made these luscious toasties.

GARLICKY MUSHROOMS WITH WHIPPED HERB RICOTTA AND THYME

The homemade bread was sliced and toasted under the grill in the oven until golden.  I sautéed some chopped garlic in butter, added shiitake mushrooms and a few thyme sprigs, then a splash of white wine, salt, and pepper.  I made a quickly whipped ricotta cheese with a pinch of salt, pepper, granulated garlic, and chilli flakes.  Then lathered the ricotta onto the toast, added the garlicky mushrooms and more fresh thyme, chilli flakes, and gave it a final drizzle of EVOO.

FRESH FIGS WITH CREAM CHEESE TRUFFLE SALAMI TRUFFLE HONEY AND PISTACHIOS

The homemade bread was sliced and toasted under the grill in the oven until golden then I slathered cream cheese on top.  I sliced up fresh figs and arranged them on top with truffle salami, drizzled some truffle honey and thick balsamic on top, and finished with a sprinkling of pistachios.
