First things first.. can we just taco bout these tacos?!. 🌮 🎉

These Soft Corn Black Bean Tacos went down a treat in the Dhillon household.. the kids relished them.. the 12-year-old practically swallowed 4 of them in the time I had barely finished one.

Go on. Give this a go. It’s so simple. You could cheat and buy store-bought guacamole and salsa, but it’s so worth the extra 10 minutes to make your own seasoned and spiced to your liking.

Ingredients

  • Black Beans
  • 2 tins black beans rinsed
  • 3 cloves garlic crushed
  • 1 onion chopped fine
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt to taste
  • Guacamole
  • 2-3 Avocados - Cut into small squares :avocado:
  • 1 tomato - deseeded and diced small
  • 2-3 Spring onions chopped fine
  • Handful coriander - chopped
  • Chilli - chopped fine
  • Lime - 1 juiced
  • Salt & Pepper
  • Salsa (made in my Vitamix in literally 2 mins)
  • 2-3 large tomatoes
  • 1/2 red onion
  • Handful coriander - chopped
  • 2 cloves garlic
  • Lime - squeeze
  • Chilli - any will do, but I used 2 Mexican Anchos
  • Salt/ Sherry Vinegar
  • Blitz. Taste. Adjust seasoning to your liking.
  • Toppings
  • Grated cheese
  • sour cream
  • red cabbage
  • sweet corn
  • pickled red onion
  • jalapeño
  • lime

Instructions

  1. Fat of your choice
  2. Sauté garlic and onions on med heat in a little oil, add spices, add beans, continue to cook for 5 minutes
  3. Mix it all up. Taste.
  4. Adjust seasoning to your liking.
  5. Tip: Keep the seed in the finished guac to stop it from browning
