Where has the sun gone this week? Rainy days call for a cosy bowl of comfort to curl up on the sofa with, and this soup does exactly that! 🍲
As I was cooking today, I ripped a kaffir lime leaf 🍃 and asked my 4-year-old to smell the fragrance. He responded.. ‘Oh Mummy, it smells like Koh Samui!’. It’s that distinctive citrus aroma of kaffir lime leaves that really does take us all back to Koh Samui, Thailand, 🇹🇭 where we have our annual family holiday, my happy place. 😊
This soup is super versatile. Add any noodles you like, replace chicken with veg or tofu.. they all work beautifully. Bonus is my kids slurped it all up without realising there was sweet potato in it!

Instructions
2. heat oil in a pan on med heat. Add ginger, garlic, chilli, and Thai curry paste. Cook for a few minutes
3. Add stock, coconut milk, and sweet potato, cook 15-20 mins until soft
4. Blitz until smooth
5. Bash lemongrass, add to soup with kaffir lime leaves, fish sauce, lime juice, sugar, and coriander, simmer 15mins
6. Add more lime, fish sauce, sugar, or chilli according to taste
7. Add the shredded chicken and cooked vermicelli noodles
8. Scatter with coriander leaves and serve
