Insanely good and super easy recipe for you again.  I sometimes make this on flatbread or tortillas if I don’t have time to make the dough, and it still turns out incredible.  Every time I make this, everyone loves this pizza. I know the combination of peanut sauce and mozzarella sounds odd, but they work so well together.  This goes down a storm with vegetarians, too, as the chicken itself doesn’t add that much flavor to the result so that you can make it without the chicken, and it is still fantabulous.

Ingredients

  • 3½ tbsps peanut butter
  • 3 tbsps brewed black tea
  • 3 tbsps rice vinegar
  • 2 tbsps soya sauce
  • 2 tsps chilli oil
  • 1 tbsp ginger minced
  • 2 tsps honey
  • ½ tsp sesame oil
  • Chilli flakes
  • Salt
  • 2 tbsp sesame seeds toasted
  • 2 spring onions sliced in thin rounds
  • 250g chicken breast, thin strips (optional)
  • ½ cup grated mozzarella or 1 large buffalo mozzarella ball (I used a mix of both)
  • 1 carrot grated
  • A small handful of coriander chopped
  • Small handful bean sprout

Instructions

  1. Pre-heat oven to 190°C or get pizza stone ready for the BBQ
  2. Blitz peanut butter, tea, rice vinegar, soy, chilli oil, ginger, honey, and sesame oil in a blender, set aside
  3. Season chicken strips with chilli flakes and salt, sauté in a pan with a little oil until cooked, set aside
  4. Coat chicken with 4 tbsp of peanut sauce, set aside
  5. Working with a 9” pizza base, spread about 1/4 cup of pizza sauce on each base, top with cheese and some chicken
  6. Bake in the oven until crust is crispy and cheese is bubbling
  7. Remove, top with carrots, coriander, spring onions, beansprouts
  8. Return to oven a couple of minutes, remove, slice, serve
