These Thai fish cakes are so delicious and take no time to make.  Every bite is bursting with flavor from the red curry, lemongrass, and kaffir lime, then you have the crunchiness of the green beans and finally sweet chili dipping sauce to balance out all the flavors.  Simply delightful!

Ingredients

  • 500g white fish fillets – I used tilapia but any firm white fish works
  • 1 Egg beaten
  • 3 tbsp Cornflour
  • 2 tbsp Fish sauce
  • 2 Red Chillis chopped
  • 5 tsps Thai red curry paste
  • Large handful fresh coriander chopped
  • 15 Green beans sliced thin rounds
  • 4 Spring onions chopped
  • 2 Lemongrass fresh chopped fine
  • 5 Kaffir lime leaves chopped
  • 1 tsp Salt
  • 1 tsp Pepper
  • Cooking oil
  • Sweet chilli sauce for dipping

Instructions

  1. Blitz fish, egg, cornflour, fish sauce, curry paste, chilli, lemongrass, kaffir lime, and coriander in a processor
  2. Transfer to a bowl, add beans, spring onions, and season with salt and pepper
  3. Mould fish cakes into the desired size
  4. Heat oil in the pan on medium heat
  5. Fry on both sides until golden and cooked through
  6. Serve with Thai sweet chilli dipping sauce
