The combo of sweet caramelised onions, salty feta and a TON of greens give these turkey meatballs so much flavour and goodness, they are insanely soft on the inside but coated in sesame seeds before cooking which give them a delightful outer crust.

2. Mix together the ingredients for the yogurt sauce, set aside or refrigerate until needed
3. Blitz the sliced bread into fine breadcrumbs in the food processor, set aside
4. In a frying pan with a little oil, fry the onions until golden
5. Blanch the spring greens or kale for 3 minutes in boiling water but add the spinach for the last 1 minute, drain, squeeze and roughly chop
6. In a large mixing bowl add the turkey mince, cooked onions, blanched greens, breadcrumbs, parsley, spring onions, feta cheese, egg white, salt, pepper and garlic powder and mix well until combined
7. Add the sesame seeds to a plate, make desired size balls with the mixture, then roll the balls into the sesame seeds and press them into the balls so they stick
8. Heat a little oil in a pan on medium heat and shallow fry the patties until slightly charred all over
9. Transfer to a baking tray in the oven until cooked through, about 10 minutes
10. Serve with the spiced yogurt, your choice of grains and a green salad
