There’s something so comforting about these delicately pan-fried cabbage leaves wrapped around seasoned rice, minced pork, crunchy bamboo shoots, carrots, and mushrooms. It’s the ultimate feeling to curl up on the sofa with a big bowl of these rolls doused in chili sauce.  My fav is Lee Kum Kee’s Guilin Chili Sauce

Ingredients

  • 300g minced pork
  • Oil of choice for cooking
  • 2 cups cooked jasmine rice
  • 1 head Savoy cabbage
  • 2 carrots, minced in food processor
  • 1 x 225g tin bamboo shoots diced small
  • 150g shiitake, trumpet or chestnut mushrooms, diced small
  • SAUCE
  • 1 tbsp minced ginger
  • 1 tbsp minced garlic
  • 4 spring onions, chopped fine
  • 4 tbsps soya sauce
  • 4 tbsps Shaoxing rice wine
  • 3 tsps brown sugar
  • 2 tsps sesame oil
  • 4 tbsps oyster sauce
  • 2 tsps dark soya sauce
  • ½ tsp ground white pepper

Instructions

  1. Cut the core out of the cabbage and blanch the entire head of cabbage for 2 mins until outer leaves are pliable and soft enough to wrap
  2. Remove 15 leaves for rolling the filling inside, shred the remaining cabbage.
  3. Mix sauce ingredients together 
  4. Marinate pork with half of the sauce mixture for 20 minutes
  5. In a pan on med-high heat, add oil, then pork, stir fry for 3-4 mins
  6. Add carrots, bamboo shoots, and mushrooms, sauté 5 mins until cooked through
  7. Add rice, add a splash of remaining sauce if the mixture seems a bit dry but reserve some for after
  8. Place a spoon of filling on a cabbage leaf, fold in sides and wrap to seal
  9. Repeat with remaining leaves and filling
  10. Heat pan on med heat with 1 tsp oil and delicately pan fry the rolls
  11. Serve with remaining sauce on top and lots of chilli sauce
