Torn Burrata Salad with Tomatoes & Avocado

Heirloom tomatoes and creamy oozing burrata, so simple yet beautiful and delicious and ready in just 10 minutes! I like mixing up the tomatoes’ colors and the sizes I cut to make the salad a little more interesting.

There are so few ingredients in this salad that quality is key with your ingredients. A good quality olive oil is a must and makes this salad extra special. Serve as a side with your BBQ or even on its own with some crusty bread to mop up all the delicious juices!

Ingredients

  • 500g Mix coloured tomatoes cut into bite-size pieces
  • 10 large basil leaves torn
  • 60g Baby kale
  • 1 Avocado cut into chunks
  • 200g Burrata torn into bite size pieces
  • Thick balsamic vinegar
  • Extra Virgin Olive Oil – I used @colive.oil
  • Sea salt – I used @maldonsalt
  • Freshly ground black pepper

Instructions

  1. Spread baby kale on a platter
  2. Layer tomatoes, avocado, torn basil leaves, then torn burrata
  3. Drizzle with thick balsamic and extra virgin olive oil
  4. Sprinkle with sea salt and a twist of freshly ground black pepper
  5. Serve and enjoy with some crusty bread
