Vibrant, spicy, fresh, and light, these delicious Thai fish and rice parcels can be whipped up in minutes and then popped in the oven for half an hour to cook.

I used ready-made Thai curry paste for convenience as a base, mixed this with coconut milk, and then added ginger, garlic, lemongrass, fish sauce, fresh coriander, kaffir lime leaves, and fresh lime, and a pinch of sugar.  I made some sturdy foil parcels, filled in a little jasmine rice in the bottom, spooned on some of that gorgeous sauce, then topped with a piece of fish which fish had dipped into the sauce, wrapped up the parcel, and finished it off in the oven.

We served this with some wok-fried greens, and it was the perfect quick, delicious, nutritious family meal.  I used tilapia because it’s what I had at home, but any white fish or salmon would work beautifully.

Ingredients

  • PLENTY OF FOIL
  • 3 Large tilapia fillets cut in half down the centre to create 6 long strips
  • 400g Jasmine rice, cooked
  • 4 tbsps Red curry paste – more if you want it spicier
  • 1 400ml can coconut milk
  • 2 tsps Fish Sauce
  • 2 Kaffir Lime leaves rolled into a cigar shape and chopped fine
  • Large handful fresh coriander chopped fine
  • 3 Spring onions chopped fine
  • 1 Lime juiced
  • 1 Lemongrass stalk chopped fine
  • 2 tsps brown sugar
  • 1 tsp Ginger chopped fine
  • 1 tsp Garlic crushed

Instructions

  1. Pre-heat to 220℃ 
  2. In a mixing bowl, mix all ingredients except tilapia and rice
  3. Assemble parcels by taking a large piece of foil, fold it in half to strengthen the package
  4. Place a mound of rice in a rectangular shape onto the foil
  5. Place a little of the red curry sauce on top of the rice and then dip one of the tilapia fillets in the red curry sauce and place on top of the rice
  6. Fold the foil over and wrap the package up like a present making sure the sauce does not escape
  7. Bake in the oven for 30 minutes until cooked well and piping hot
  8. Carefully open foil parcels and serve garnished with lime wedges and fresh coriander
