Gooey Chocolate Brioche Pudding

Now you talkin’ baby!!  Hot, custardy, spongy brioche with lashings of gooey melted chocolate.. heaven in a bowl.  It literally takes 5 mins to prepare with so few ingredients, forget about it for an hour, pop it in the oven, and the result is just so ridiculously lip-smacking delicious! 

This recipe is one I made months ago and have pulled from the archives… I think my photography skills have improved slightly since then, but I wanted to share with you as I think it’s such a fab option for a holiday dessert.  My recipe makes quite a lot because microwaved leftovers are a MUST the next day so adjust quantities accordingly.

Ingredients

  • 400g Brioche loaf
  • 150g Chocolate spread (or about ⅓ small jar)
  • 6 Eggs
  • 600ml Milk
  • 2 tbsp Maple syrup
  • Pinch nutmeg
  • 1 tsp Vanilla essence
  • Large handful of chocolate chips

Instructions

  1. Grease baking dish with butter
  2. Slice brioche loaf spread each slice generously with chocolate spread
  3. Layer slices into the dish
  4. Whisk eggs, add milk, syrup, nutmeg, and vanilla
  5. Add liquid mix to the dish
  6. Sprinkle in chocolate chips, set aside for 1 hour for liquid to soak into the bread
  7. Bake in the oven at 180℃ for 30-40 mins until fully set and golden on top.
