They almost look too pretty to eat, don’t they?? Nope.. they vanished as soon as I put them on the table!! The crunch of the watermelon radish, the avo’s creaminess, the tuna’s saltiness, and the kick of chilli make this the perfect bite.

Instructions

  1.  Super easy to prepare, scrub them well and slice very thinly, then don’t even need to be peeled.
  2. I made a simple tuna paste with tinned tuna, siracha mayo and pepper then added diced avocado, coriander, and green chilli.
  3. If you cant get a hold of watermelon radishes (typically available in Spring) then you could use any beetroot variety as a replacement.. purple, candied or golden.
