Cheats quiche? Yup, that’s what this is because it is just so, so, so easy. You can make this gorgeous quiche with 5 ingredients and a bit of seasoning. Change up the salmon and spinach, make it vegetarian with mushroom, asparagus, leeks or put some bacon in it if you fancy. You can change the herbs too. Salmon and dill go together, so pick a herb that pairs well if you change the main ingredients. If you stick to the basic method, you can change up the fillings any way you want. Eat hot out the oven or cold for a packed lunch!

Ingredients

  • 1 roll shortcrust pastry
  • 100g smoked salmon or flaked salmon
  • 100g baby spinach
  • 250g ricotta cheese
  • 6 eggs
  • 1 tsp chopped fresh dill
  • Pinch chilli flakes
  • Pepper

Instructions

1. Pre-heat over to 180°C
2. Place dough over a 7” pie tin and brush with beaten egg. Slit pasty a couple of times to prevent it puffing up
3. Blind bake till a little golden for 10 mins
4. Place slices of smoked salmon and the ricotta on the base
5. Wilt the spinach in the pan and scatter over salmon and ricotta
6. Whisk eggs, pour into pie
7. Bake 45 mins-1 hour until set
8. Slice up and enjoy
