In case you haven’t realised, I do lovvvvve grilling veggies… ever tried grilling sweet potatoes?? You don’t need to steam, boil or pre-cook them or anything… slice them thin, drizzle them with olive oil and salt, then place them on a hot grill pan or BBQ for about 5 mins on each side until you get that char grill marks… a game-changer for sweet potato fans!!
I am obsessed and happy with this Chipotle Tahini Sauce I created. Believe me, friends… it is as easy as chucking all the ingredients into a food processor and blitzing them to smooth creamy deliciousness.
Most of the ingredients you will have in your pantry already… olive oil, garlic, lime, smoked paprika, cumin, honey… The only two ingredients you may not be familiar with are the tahini and the chipotle chillis in adobo sauce.
Tahini (a sesame paste) is now readily available in every supermarket and is a crucial ingredient in hummus but also used in loads of salad dressings, a great addition to your pantry. The tinned Chipotle chillis I used are La Costena Chipotles in Adobo sauce @lacostenauk available on Amazon, but other brands are now sold in supermarkets too… it’s well worth buying a few tins to spice up marinates, sauces and veggies.
You won’t be disappointed if you give this one a go… I know the dressing will become one of your favs and can be used as a drizzle on top of meats, veggies or even as a chip dip!
