DUKKAH CRUSTED CAULIFLOWER STEAKS, CREAMY HUMMUS, GARLICKY HALLOUMI & CARAMELISED SHALLOTS

The perfect #MeatFreeMonday deliciousness for you today guys… Nutty, garlicky, meaty, sooooo flavourful and super healthy too!!

The cauliflower steaks are roasted to golden perfection with Dukkah, a store bought Egyptian nut, seed and spice blend then served on top of a silky smooth, divinely creamy hummus.  Golden garlicky halloumi added a wonderful bite to the plate, topped with caramelised crispy shallots which gave a sweetness to balance it all… A HEAVENLY COMBO of textures and flavours!!

You could serve this as a veggie main dish or a quick and easy dinner/BBQ side dish… it’s extremely versatile and shockingly addictive too.  Believe me… you NEED this recipe in your life!

DUKKAH CRUSTED CAULIFLOWER STEAKS, HUMMUS, GARLICKY HALLOUMI & CARAMELISED SHALLOTS

Ingredients

  • 2 Whole cauliflowers, cut into 1” steaks (I used regular cauliflower and Romanesco)
  • Olive oil
  • 3 tbp Dukkah spice
  • Sea salt and ground black pepper
  • 250g pack Halloumi
  • 1.5 tbsp Garlic minced
  • Olive oil
  • GARNISH: Pinch of sumac, lemon wedges
  • .
  • HUMMUS
  • 300g Chickpeas, cooked
  • 150g Tahini
  • 6 Garlic cloves crushed
  • 2 Lemon juiced
  • 80ml Water
  • 1/4 tsp Cayenne
  • 1/4 tsp Paprika
  • 1/2 tsp Garlic granules
  • 1 tsp Sea salt
  • 0.5 tsp Ground black pepper
  • 250ml Olive oil
  • .
  • CARAMELISED SHALLOTS
  • 3 Shallots, cut into wedges
  • 3 tbsp Olive oil
  • 2 tbsp Sugar
  • Sea salt and black pepper

Instructions

  1. Pre-heat the oven to 200°C
  2. Slice the Halloumi into 1/2” thick pieces, add to a plate with a few generous glugs of olive oil and the minced garlic, set aside to marinate
  3. In a food processor whizz together all the hummus ingredients, add the oil gradually until the hummus is to your desired consistency, you may need slightly more or less depending on the brand of chickpeas you use
  4. Taste and add more salt, lemon or spice if desired, set aside
  5. Heat a glug of olive oil in a large frying pan over medium heat and cook the cauliflower steaks for a few minutes until the bottom starts to brown slightly
  6. Remove the steaks on to a baking tray lined with parchment paper and add the cauliflower steaks brown side up, Sprinkle over the Dukkah spice, salt and pepper, then roast in the oven for 15 minutes until tender
  7. On another baking tray toss the shallots with olive oil, sugar, salt and pepper and roast in the oven until crisp and golden
  8. Heat the same frying pan over medium heat, once hot add the Halloumi and shallow fry until the cheese and garlic are both golden and crisp, set aside
  9. Place the hummus on your serving plate, arrange cauliflower steaks on top, add the halloumi, crispy garlic and caramelised shallots
  10. Sprinkle with sumac and garnish with lemon wedges
  11. Enjoy with crusty bread!
