CHORIZO BASIL CHICKEN & POTATO TRAYBAKE

This traybake is soooo easy and so flavourful and will for sure be your new go-to chicken dinner fav!  Best part is, everything bakes in ONE dish so super easy clean up.

CHORIZO BASIL CHICKEN & POTATO TRAYBAKE

Ingredients

  • 1kg new potatoes, halved
  • 2 shallots, cut into wedges
  • 1-2 whole bulbs of garlic, tops sliced off to reveal the top of the cloves
  • Olive oil
  • 1 tsp paprika
  • 1 tsp sugar
  • Sea salt and fresh ground black pepper
  • 5 large chicken breasts
  • 280g chorizo, cut into 20 strips
  • 20 basil leaves
  • 4 small tomatoes, each cut into 5 slices
  • Small handful of mozzarella cheese grated

Instructions

1. Pre heat the oven to 180C
2. Tip the new potatoes, shallots and whole garlic bulbs into a large roasting dish, sprinkle over the paprika, sugar, salt, pepper and good glug of olive oil. Give it all a good mix with your hands making sure the garlic cut side is facing upwards, then roast in the oven for 30 minutes
3. Make 4 slits in each chicken breast cutting only 2/3 of the way down and insert a piece of chorizo, a slice of tomato and a basil leaf into each slit. Season the chicken with salt and pepper and drizzle with a little olive oil too
4. Bake the chicken breasts for about 30 mins or until the chicken is cooked through and the potatoes are tender. Sprinkle on the grated mozzarella for the last 5 minutes of cooking
5. Serve with a your favourite veggie side or salad
