TRAYBAKE BALSAMIC CHICKEN, CHORIZO, POTATOES & CAVOLO NERO

Crispy skinned, garlicky, spiced chicken with a ton of veg, spicy chorizo and golden roasted potatoes…. The ultimate easy weeknight dinner with just minutes of prep and hardly any clean up.  You can even refrigerate the whole tray and stick it in the oven right before dinner!  

No matter how you serve this easy tray bake Balsamic Chicken dish, everyone will be singing your praises, and licking their plates clean! Hope you enjoy it!!

TRAYBAKE BALSAMIC CHICKEN, CHORIZO, POTATOES & CAVOLO NERO

Ingredients

  • Olive oil
  • 8 Chicken legs or thighs on the bone
  • 1kg New potatoes
  • 200g Chorizo,
  • 1 Red pepper,
  • 1 Orange pepper,
  • 1 Red onion, peeled
  • 125g Cavolo nero, sliced
  • 1 Whole pod of Garlic, top sliced off
  • 0.5 Lemon, zest only
  • Sea salt flakes and freshly ground pepper
  • 1 tbsp Mediterranean seasoning @bartingredients
  • 1 tsp Crushed red chilli flakes
  • 3 tbsp Balsamic vinegar (I used @thegiftofoil Caramelised onion balsamic)

Instructions

  1. Pre-heat the oven to 180C
  2. Roughly chop the chorizo, peppers and red onion into bite size pieces, set aside
  3. In a large roasting tray add the cavolo nero, peppers and onion, drizzle with olive oil and season with salt and pepper
  4. Then add the potatoes, chorizo, chicken and whole garlic, drizzle with more olive oil and season with more salt and pepper
  5. Mix everything up so it is fully coated in the oil then sprinkle over the lemon zest, Mediterranean seasoning and crushed red chilli flakes
  6. Finally drizzle over the balsamic
  7. Cook in the oven for 1 hour turning everything in the oils released half way through cooking, continue to cook chicken skin side up
  8. Cook until the potatoes are tender and the chicken skin is crispy
  9. You can set the oven to grill for a few minutes if you want more colour on the chicken and potatoes
  10. Enjoy hot with a crisp green salad
