TORN BURRATA, HERITAGE TOMATO & CHARRED COURGETTE SALAD

So easy… so satisfying and get that extra veg from the courgettes too… the perfect al fresco make your own toasties!  Love Burrata??  Ever tried Smoked burrata?  Still creamy and oozy but with a depth of woody smokiness… so indulgent… then matched with juicy heirloom tomatoes and char grilled courgettes… OMG… so so good.  Don’t worry if you can’t find smoked burrata as any burrata works beautifully here!

I would devour this on its own with some golden toasted sourdough to mop up all the delicious juices but it works really well as a side salad to a BBQ too! Enjoy!

TORN BURRATA, HERITAGE TOMATO & CHARRED COURGETTE SALAD

Ingredients

  • Extra Virgin Olive Oil
  • 2 Courgettes, sliced
  • Sea salt flakes and freshly ground black pepper
  • 3 coloured Heirloom Tomatoes, sliced
  • 150g Burrata (I used a smoked burrata)
  • Crusty bread toasted
  • Drizzle Balsamic glaze

Instructions

1. Heat the BBQ grill or oven grill. Season the courgettes with olive oil, salt and pepper and grill until cooked and slightly charred, set aside
2. Slice the tomatoes and arrange them on your platter along with the courgettes, dot with torn burrata
3. Drizzle with olive oil and balsamic, season with sea salt and freshly ground black pepper
4. Serve with toasted bread of your choice
5. Enjoy!
