Need a healthier crisp alternative?? I think we all do!! These little baked bites of deliciousness are sooooo more-ish.. the perfect nibble to have with a chilled glass of vino.. crunchy on the outside and soft on the inside, then dipped into a spicy tomato sauce.
I couldn’t believe the kids ate them too!! Next time you have a courgette lurking in the back of your fridge, you can prep these in 5 mins, give them a go, and you’ll be hooked!
1. Preheat oven to 200°CIngredients
Instructions
2. Trim ends of courgettes and slice into 1/4 inch rounds
3. Whisk egg in a small bowl, set aside
4. Mix remaining ingredients in a bowl
5. Using a fork, carefully dip each round into the egg and then into the breadcrumb mixture, flip both sides gently, pressing the breadcrumbs into the courgettes
6. Place on a baking sheet until crispy and golden, 20-25 mins
7. The spicy tomato sauce isn’t a must as these are divine on their own. You could use homemade, or if you’re feeling lazy like I was today, then use a store-bought one. I used @brindisaspanishfoods Salsa Brava, which worked perfectly.
