CHEESY GARLIC CRUMPET TEAR & SHARE

What do you do with a pack of untouched crumpets in the fridge about to expire?  THIS! 

I wanted a nice crusty sourdough to dunk into my lasagne soup the other night but didn’t have any.  These oozy cheesy, garlicky crumpets turned out even better. 5 mins prep and about 15 mins in the oven and what do you have? The happiest kiddos ever!

Ingredients

  • 9 crumpets, halved
  • 100g melted butter
  • Small handful parsley, chopped
  • 6 garlic cloves, crushed
  • Sea salt, black pepper and crushed red chilli flakes
  • 60g cheese grated, I used a mix of cheddar, parmesan and mozzarella

Instructions

1. Pre heat the oven to 200C
2. Mix together the melted butter, parsley, garlic, salt, pepper and chilli flakes
3. Brush all over the crumpets and arrange in an oven proof dish
4. Scatter over the grated cheese and bake in the oven until golden
5. Enjoy immediately!
