This ain’t no standard banana bread, guys!! This is a mix between a spongy cake and a gooey crisp topped spiced sticky-like brownie.. the sweetness of the caramelised banana with the spicy ginger and cinnamon combine perfectly like the warmest hug ever 🤗 .

The perfect accompaniment to my late morning cuppa.. (my Parsi chai, heat the mug with hot water, tip out, add new boiling water with a teabag, some fresh mint and some lemongrass (leeli-chai) leaves, brew 5 mins, remove and add a tiny splash of milk).. now ready to curl up on the sofa and indulge!!!

  • 300g dark brown sugar
  • 2 eggs
  • 5 large bananas (4 mashed, 1 sliced lengthways in half)
  • 280g plain flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 140g unsalted butter, melted


  1. Grease loaf tin, add parchment paper so cake comes out easily
  2. Pre-heat oven 180°C
  3. Beat sugar and eggs in a mixer with paddle attachment, add mashed bananas
  4. Add flour, baking powder, bicarbonate of soda, cinnamon and ginger to sugar mixture
  5. Mix until dry ingredients incorporated 
  6. Add melted melted and beat until mixed
  7. Pour mixture into tin and smooth with palette knife
  8. Sprinkle sliced banana with a mix of sugar and cinnamon and carefully place on top of mix, push down slightly
  9. Bake 50 mins - 1 hour until firm and a skewer comes out clean.  It should be crispy on top like a brownie
  10. Cool slightly but definitely have a slice while its still warm.  Enjoy!
