A fridge raid salad at its best! Yes peeps… such an easy one to make… my veggies are always roasted to perfection in the air fryer, then whip up the dressing with some mashed roasted garlic… give it all a toss, crumble on the feta and voila… pure deliciousness!!
1. Roast the tomatoes on the vine and the garlic in the oven or air fryer with a drizzle of olive oil, salt and pepper for about 12 mins or until they start to charIngredients

2. Pre-heat the oven grill or air fryer and grill the aubergine and the fennel with just a drizzle of oil, some salt and pepper until charred
3. In your serving dish, mash 4 of the roasted Garlic cloves with a fork then mix in the remaining dressing ingredients
4. Add the salad leaves, grilled aubergine and fennel, toss to mix
5. Add the vine tomatoes and garlic, crumble the feta on top and drizzle with more olive oil
6. Enjoy!
