ROASTED TOMATO, AUBERGINE & FENNEL SALAD WITH FETA

A fridge raid salad at its best!  Yes peeps… such an easy one to make… my veggies are always roasted to perfection in the air fryer, then whip up the dressing with some mashed roasted garlic… give it all a toss, crumble on the feta and voila… pure deliciousness!!

ROASTED TOMATO, AUBERGINE & FENNEL SALAD WITH FETA

Ingredients

  • 200g Cherry tomatoes on the vine
  • 8 Garlic Cloves, peeled
  • Olive oil @thegiftofoil
  • Sea salt and black pepper
  • 1 Aubergine, sliced thin
  • 0.5 Fennel, sliced thin
  • 100g Salad leaves
  • 20g Feta cheese
  • DRESSING
  • 4 Garlic cloves (roasted already from above ingredients)
  • 3 tbsp Olive oil @thegiftofoil
  • 1 tbsp Red wine vinegar @thegiftofoil
  • 1 tsp Mustard
  • 1 tsp Dried oregano
  • Sea salt and black pepper

Instructions

1. Roast the tomatoes on the vine and the garlic in the oven or air fryer with a drizzle of olive oil, salt and pepper for about 12 mins or until they start to char
2. Pre-heat the oven grill or air fryer and grill the aubergine and the fennel with just a drizzle of oil, some salt and pepper until charred
3. In your serving dish, mash 4 of the roasted Garlic cloves with a fork then mix in the remaining dressing ingredients
4. Add the salad leaves, grilled aubergine and fennel, toss to mix
5. Add the vine tomatoes and garlic, crumble the feta on top and drizzle with more olive oil
6. Enjoy!
