Spicy Harissa Whole Roasted Cauliflower

Harissa paste is magical and is well worth making your own at home.  My homemade harissa paste has a proper chili kick, and it’s sweet and smoky with the perfect balance of spices.   Lather it on veggies, meat, or fish, mix it with mayo for a dip or dressing. The options are endless. 

A meal in itself, this spiced and charred cauliflower with a green lentil salad makes the perfect midweek dinner. 

The tinned chipotle chillis I used are La Costena Chipotles in Adobo sauce @lacostenauk available on Amazon, well worth buying a few tins to spice up marinated sauces, and veggies.

Ingredients

  • HARISSA PASTE
  • 2 roasted red peppers from a jar
  • 2 pieces chipotle peppers
  • 4 dried ancho chillis
  • 1 tsp cumin seeds
  • ½ tsp ground caraway seeds
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • 4 garlic cloves crushed
  • 1 lemon juiced
  • 3 tbsps olive oil
  • 1 tsp salt
  • 1 Whole cauliflower
  • SALAD
  • 200 kg whole green lentils
  • ½ red onion diced very fine
  • 1 lemon juiced
  • 2 tomatoes diced
  • ½ large cucumber diced
  • Large handful chopped coriander
  • Large handful chopped mint
  • 2 tbsp sherry vinegar
  • Salt and pepper to taste
  • Oil of choice
  • 20 curry leaves
  • 1 tsp mustard seeds

Instructions

  1. Pre-heat oven to 220°C
  2. Blanch cauliflower in boiling water for 7 mins, drain, dry, set aside
  3. Cook lentils, don’t overcook. They should not split or be mushy, set aside
  4. Remove stem and seeds from ancho chillis, soak in warm water 20 mins
  5. Blitz paste ingredients in the food processor, brush all over the cauliflower
  6. Roast in the oven or BBQ 30 mins until slightly charred
  7. Heat oil in the pan, add mustard seeds and curry leaves until they crackle, set aside
  8. Mix all remaining salad ingredients, add mustard seeds and curry leaves
  9. Arrange on platter and top with whole roasted cauliflower, slice
