BBQ Smoked Haddock with Green Chutney On a Lentil Salad Bed

What’s your favorite smoked haddock dish?  I’ve only ever cooked smoked haddock when making kedgeree, a fish pie, or in a chowder, so I wanted to try something different, and this turned out exactly as I had hoped.

The smoked haddock is coated in spicy green chutney and then wrapped in foil and whacked on the BBQ grill.  As it’s in the foil, you can forget about it for 10 minutes, turn it over, then forget about it again while you prepare the salad, it literally takes 20 minutes from start to finish, and you have such a balanced and healthy meal. 😊

Ingredients

  • 4 Fillets smoked haddock
  • GREEN CHUTNEY
  • 50g Mint leaves
  • 50g Coriander leaves
  • 1 small red onion chopped
  • 3 Small green chillis
  • 4 Garlic cloves
  • 1 tsp Salt
  • ½ tsp Sugar
  • 4 tbsp Lemon juice
  • ½ tsp Smoked paprika
  • SALAD
  • 1 Packet OddPods ready to eat Brown lentils – I used @oddpodsfoods
  • 1 Handful baby kale or any salad leaves
  • ⅓ Cucumber diced small
  • 8 Radishes cut small
  • ⅓ Red pepper diced small
  • ⅓ Green pepper diced small
  • ½ Red onion finely chopped
  • Small handful coriander finely chopped
  • ½ Lemon juiced
  • Drizzle extra virgin olive oil
  • 1 tbsp Honey
  • Sea salt
  • Pepper
  • 1 Avocado diced

Instructions

  1. Place all ingredients for chutney in a food processor and blitz
  2. Coat fish in chutney mix, wrap into a foil parcel, set aside
  3. Add brown lentils and all salad ingredients into a bowl and mix well, set aside
  4. Heat oven grill or BBQ and grill for 20 minutes until cooked and slightly charred. If using a BBQ, the fish will char slightly as there is no oil, but it should not burn
  5. Place mixed lentil salad in the middle of a serving dish 
  6. Flake the fish with a fork and place it on top of the salad
  7. Drizzle with a little olive oil and sprinkle with more sea salt and pepper
