Ingredients

  • 250g Purple sprouting broccoli
  • 1 Fennel, cut into wedges
  • Olive oil
  • 200g Cooked brown lentils
  • Sea salt & black pepper
  • Crushed red chilli flakes
  • .
  • SMOKED GARLIC CUMIN TAHINI DRESSING
  • 6 Smoked Garlic cloves crushed OR 2 regular garlic cloves crushed
  • 60ml Lemon juice
  • 140g Tahini paste
  • 1/2 tsp Sea salt
  • Pinch ground cumin
  • 6 tbsp Cold water

Instructions

  1. Pre-heat BBQ grill, grill pan or oven grill
  2. Whisk together all ingredients for the tahini dressing in a bowl, set aside
  3. Lay the vegetables in a single layer in an oven tray, drizzle with olive oil, season with salt and pepper and grill until charred, cooked but still retaining some crispness; remove and set aside
  4. Arrange the brown lentils on your salad plate, drizzle a little olive oil and season with salt and pepper
  5. Top with the charred broccoli and fennel, then drizzle with the tahini dressing
  6. Finish with more sea salt flakes, black pepper and crushed red chilli flakes 
  7. Enjoy!
