CRAB & SOBA NOODLES WITH GINGER TAHINI DRESSING

OMG this salad was soooo yum and such a fluke… I love a Japanese cold crab salad but it’s filled with mayo so I wanted to change it up and make a more healthy creamy dressing… this worked like a dream and was devoured! Made with easy to find (and cheap) crab sticks (I love the Vici Surimi Royale ones from @ocadouk, only £1.60!!)

CRAB & SOBA NOODLES WITH GINGER TAHINI DRESSING

Ingredients

  • 80g Soba noodles
  • 120g Spinach
  • 120g Crab sticks, shredded
  • 6 Spring onions, julienned
  • 1 Carrot, peeled and shredded (I use a julienne peeler)
  • GARNISH: Toasted sesame seeds, chilli oil
  • .
  • DRESSING
  • 40g Tahini
  • 2 tbsp Soya sauce
  • 1 tsp Sesame oil
  • 1 tbsp Miso paste (I used white)
  • 1.5” square piece of Ginger
  • 1 clove Garlic
  • 1 Chilli or chilli sauce (less or more to your liking)
  • 0.5 tsp Salt
  • 1 tbsp Mirin
  • 40ml Water

Instructions

1. Cook the soba noodles according to packet instructions, drain and rinse with cold water, set aside
2. Microwave or blanch the spinach for 2 mins to wilt, when cool enough to handle, squeeze out as much liquid as you can, then roughly chop and set aside
3. Blitz all the dressing ingredients together
4. In a large bowl add the cooked noodles, spinach, shredded crab, spring onions and carrot
5. Pour over the dressing and mix well
6. Top with toasted sesame seeds and lashings of chilli oil
7. Devour!
