The sausage meat is mixed with bacon, fennel, garlic, onions, and celery to make it unbelievably flavourful.  I put beautiful boiled eggs from Clarence Court in the middle of the meat to give you that fab sausage and egg combo everyone loves!  

Seriously though, the hubby said it’s the best sausage roll he’s ever eaten, and if there’s a sausage roll connoisseur out there, it’s him, so patting myself on the back for smashing this one!!  It was HUGE, too, and would feed 6-8 people!!

Ingredients

  • 800g sausage meat
  • 6 eggs hard-boiled and peeled
  • 1 egg beaten
  • 2 x 320g sheets pre-rolled puff pastry
  • 2 onions chopped fine
  • 6 cloves garlic crushed
  • 2 celery stalks chopped fine
  • Small handful parsley chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 3 tsps ground toasted fennel seeds
  • 1 cup panko breadcrumbs
  • 200g streaky smoked bacon chopped small
  • 3 tsps Worcestershire sauce

Instructions

  1. Pre-heat oven 180°C
  2. Sauté onions, garlic, celery in the pan till soft, drain, set aside
  3. Sauté bacon until crisp, drain well, set aside
  4. Add onion mix to sausage with bacon, parsley, salt, pepper, fennel, Worcestershire sauce, and breadcrumbs. Mix well with hands.
  5. Join pastry sheets together to make a rectangle 35cm x 45cm
  6. On baking paper, flatten out sausage meat, make a smaller rectangle 25cm x 35cm
  7. Lay 6 eggs across the middle, roll up so eggs in the middle like a giant meat-roll
  8. Place roll in the middle of the pastry
  9. Cut 1” thick slices on diagonal from sausage to end of the pastry, brush strips with beaten egg.
  10. Trim ends of pastry
  11. Fold pastry alternatively over each other to give a twist effect
  12. Brush top with egg, top with sesame and poppy seeds
  13. Bake in oven 60-75 mins until the pastry is golden
