Need to change up your salad style, guys? This simple Greek salad is jazzed up with crunchy spicy chickpeas to twist it, and look how colourful is it with the peppers cut that way. The saltiness of the olives, creaminess of the feta, crunch, and spice of the chickpeas, and tanginess (is that even a word?) of the dressing is the perfect summer combo. You probably have all the ingredients to hand already, so what’s stopping you?? Feta was late than never!! 😉 Ha.
1. Pre-heat oven to 180°CIngredients

2. Rinse, drain, dry chickpeas well, put on roasting tray with olive oil, paprika, onion granules, and garlic powder, roast until crispy about 30-40 mins but keep moving them around, so they do not burn, set aside to cool
3. Slice peppers width ways into rings, discard core and seeds, arrange on outside of the platter
4. In a bowl, mix tomatoes, cucumbers, olives, feta, and red onions, set aside
5. Add salad dressing ingredients into a jar, shake
6. Mix dressing into salad, reserve some for the peppers
7. Add a mixed salad to the middle of peppers on a plate, finish with more dressing and crispy chickpeas.
