Crisp, hot parathas stuffed with paneer masala, crunchy veg, more gooey melted cheese, drizzled with spicy mint and coriander chutney. YESSSSSSS.

Ingredients

  • 500g paneer cubed 1cm squares
  • Cooking oil
  • 1 red onion diced fine
  • 1 tsp cumin seeds
  • 1.5 tbsp minced ginger
  • 1.5 tbsp minced garlic
  • 2 green chillis chopped fine
  • 1/2 red pepper sliced thin
  • 150g green peas
  • 1/2 tsp amchur powder (dried mango)
  • 1 tsp garam masala
  • 1 tsp chaat masala powder
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1/2 lemon juiced
  • A small handful of fresh coriander chopped
  • 1/4 cup carrot grated
  • 1/4 cup shredded red cabbage
  • 1/4 cup red onion thinly sliced
  • 200g grated melting cheese - I used Monterey Jack.
  • MINT CHUTNEY
  • 50g mint leaves
  • 50g coriander leaves
  • 1 small onion chopped
  • 3 small green chillis
  • 4 garlic cloves
  • 1 tsp salt
  • 1 tsp sugar
  • 4 tbsp lemon juice.

Instructions

1. Sauté ginger, garlic, chilli, onion on a med flame until cooked through, add cumin seeds, cook for a minute
2. Add red pepper, peas, amchur powder, garam masala, chaat masala powder, chilli powder, smoked paprika. Mix well, cook sauce for 5 mins adding a splash of water
3. Mix in paneer. Add lemon juice and more water if dry, cover, simmer 5 mins, set aside
4. Blitz chutney ingredients, set aside
5. On low heat, put a little oil in a pan, add a sprinkle of the grated cheese on one half, then cooked paneer, coriander, red cabbage, grated carrots
6. Sprinkle more grated cheese on top, fold paratha over, flip carefully
7. Make sure all cheese is melted. The paratha should be a little crisp
8. Remove onto a chopping board, slice in half
9. Serve with chutney
