Roasted Miso Cabbage Wedges

I know you will absolutely FALL IN LOVE with this dish… cabbage wedges brushed with a mixture of white miso paste, mirin, rice vinegar, brown sugar, and soya sauce, then roasted in the oven until charred and crispy… soooo good… simply irresistible… bursting with umami. The best thing is they only take 5 minutes to prepare!! 🙌🏽

I love it when a few simple store cupboard ingredients can transform the humble cabbage into something spectacular and so damn easy too.  I could have devoured this whole plate in one go… serve as a side or a beautiful vegetarian main with rice or noodles.

Ingredients

  • 1 Savoy Cabbage cut into 2” size wedges
  • 2 tbsp Oil - I used Avocado
  • 2 tsp Sesame Oil
  • 85g White Miso Paste
  • 60ml Mirin
  • 2 tbsp Rice Vinegar
  • 2 tbsp Soya Sauce
  • 2 tbsp Brown Sugar
  • GARNISH: Sliced Spring Onions, Sliced Red Chillis, Toasted Sesame Seeds

Instructions

  1. Preheat the oven to 200°C
  2. Place cabbage wedges on a lined oven tray in a single layer
  3. In a bowl, mix the oil, sesame oil, white miso, mirin, rice vinegar, soya sauce and brown sugar
  4. Brush the mixture all over the wedges and roast in the oven for about 25 minutes or until slightly charred and tender, turning halfway
  5. Remove from the oven, arrange on a serving platter and garnish with spring onions, sliced red chillis and toasted sesame seeds
  6. Serve hot or at room temperature
  7. Enjoy!
