SMASHED SWEET POTATO & LEEKS WITH A SPINACH, CORIANDER & WALNUT PESTO

I could’ve licked this plate clean if I didn’t have to share with the rest of my fam…! 

The sweet potatoes and leeks become all creamy and caramelised when roasted and alongside the peppery, garlicky, nutty pesto was such a delish combo…. finished with little bursts of tanginess from the pomegranate perils.  This is a recipe I will be making on repeat, we enjoyed it with pan seared sea bass.  It would pair beautifully with any fish or meat but I could have simply devoured it on it’s own!

SMASHED SWEET POTATO & LEEKS WITH A SPINACH, CORIANDER & WALNUT PESTO

Ingredients

  • 3 Sweet Potatoes, peeled and roughly cut
  • 2 Leeks, medium size, cut into 5cm long pieces
  • Drizzle of Extra virgin olive oil
  • 3/4 tsp Turmeric powder
  • 3 Garlic cloves, peeled and roughly chopped
  • Crushed red chilli flakes
  • Sea salt and ground black pepper
  • GARNISH: Pomegranate perils
  • .
  • SPINACH CORIANDER WALNUT PESTO
  • 30g Walnuts, toasted and roughly chopped
  • 100g Spinach, fresh baby leaf
  • 20g Coriander, with stems
  • 4 Garlic cloves, crushed
  • 100ml Extra virgin olive oil
  • 0.5 tsp Chilli flakes
  • Sea salt flakes and freshly ground black pepper

Instructions

  1. Pre-heat the oven to 180°C and line an oven tray with parchment paper
  2. Place the sweet potato, leeks and garlic on the tray and drizzle liberally with olive oil, sprinkle with the turmeric , chilli flakes, salt and pepper then give them a good mix
  3. Roast in the oven for around 30 mins or until tender
  4. Meanwhile, while the potatoes are cooking, blitz all the ingredients for the pesto in a food processor, set aside
  5. Remove the potatoes from the oven and smash until they are a little mashed, but not completely to give them a bit of texture
  6. Transfer the smashed potatoes and leeks to a serving dish, dollop with the pesto and garnish with pomegranate perils
  7. Enjoy!

Notes

Enjoy any leftover pesto with pasta, in sandwiches or freeze for another day!
