Colourful, crunchy, uber healthy and delicious, this spiralised Oriental veggie salad is perfect for the sun today! ☀️ The flavours of the soy, sesame, vinegar and honey are so yummy when combined, and you can adjust the chilli to your liking. I love raw courgettes in salads, they have the best crunch, and if you leave them to marinate for a while, they soften a bit and really give you the feeling that you are slurping noodles.

If you don’t own a spiraliser, then an ordinary vegetable peeler would work fine here, and you could make a ribbon salad instead of a spiralised noodle one!

Ingredients

  • 1 yellow courgette
  • 1 green courgette
  • 1 cucumber
  • 1 carrot
  • 1/2 red pepper
  • 1/2 cup sliced red cabbage
  • 2 tbsp soya sauce
  • 2 tbsp sesame oil
  • 4 tsp rice vinegar
  • 2 tsp siracha chilli sauce
  • 4 tsp honey
  • 1/4 cup chopped peanuts
  • Sesame seeds for garnish.

Instructions

1. Spiralise courgettes, cucumber and carrot
2. Slice red pepper and cabbage thin
3. Mix dressing: soya, sesame oil, rice vinegar, sriracha, honey
4. Top with peanuts and sesame seeds.
