Sweet Potato and Blackened Corn Salad with Chipotle Dressing

Fed up with sweet potatoes in the back of your fridge, and you still haven’t decided what to make?  This salad will turn those lonely sweet potatoes into the belle of the ball.  Roasted with onions till caramelized and sticky, mixed with blackened corn and greens, then finally a kick of spicy chipotle dressing, a match made in heaven ❤️

The tinned chipotle chillis I used are La Costena Chipotles in Adobo sauce @lacostenauk available on Amazon, well worth buying a few tins to spice up marinated sauces, and veggies.

Ingredients

  • 3 Sweet potatoes, peeled, diced
  • 2 Corn on the cobs
  • 1 Red onion sliced in thin wedges
  • Large handful spinach chopped
  • Large handful kale chopped
  • A small handful of coriander chopped
  • Olive oil for cooking
  • Salad seeds – I used Good4U Salad super seeds
  • Dressing
  • 2 Pieces chipotle chilli peppers in Adobo sauce – I used @lacostenauk tinned
  • 1 Garlic clove crushed
  • 1 tsp Honey
  • 1 Orange juiced
  • 1 Lemon juiced
  • 80ml Olive oil
  • 3 tbsps Water
  • 1 tsp Salt

Instructions

  1. Preheat oven to 200° C 
  2. Add sweet potato and red onion to an oven tray, drizzle with olive oil, salt, and pepper, and roast about 20-30 mins until starting to colour on the edges.
  3. Blacken corn on the BBQ or under a grill until charred, cut off kernels, set aside
  4. Mix the sweet potatoes, corn, red onion, spinach, kale, and coriander in a bowl
  5. Blitz all dressing ingredients together until smooth
  6. Pour dressing over salad, mix well and serve immediately
