TRUFFLE WHIPPED FETA WITH GARLICKY SWEET ROASTED TOMATOES

LOVE AT FIRST BITE…. I promise you!

I could’ve dived into this plate and licked it clean! If you’ve never tried whipped feta then you’re seriously missing out… add truffle cream cheese to the mix along with golden crispy garlic and roasted vine tomatoes and your palette will be dancing with happiness!

TRUFFLE WHIPPED FETA WITH GARLICKY SWEET ROASTED TOMATOES

Ingredients

  • Extra virgin live oil
  • 250g Cherry tomatoes on the vine
  • 4 Garlic cloves, sliced thin
  • A few sprigs fresh thyme and fresh oregano
  • Sea salt and freshly ground black pepper
  • 140g Truffle cream cheese or regular cream cheese
  • 200g Feta cheese
  • Splash of water or olive oil

Instructions

1. Pre-heat the oven to 180C
2. Place the tomatoes with the vines onto a lined oven tray, scatter over the sliced garlic and fresh herbs, drizzle with olive oil and season with salt and pepper
3. Roast in the oven for 30-35 mins until the tomatoes are caramelised and almost bursting, and the garlic is gorgeously crispy and golden
4. In a food processor add the cream cheese and feta, blitz until combined, add a splash of water or olive oil to your desired consistency
5. Transfer the whipped cheese to a serving plate, top with the vine roasted tomatoes, crispy garlic, herbs and olive oil
6. Season with more sea salt and black pepper and serve with crusty bread to dip
7. Enjoy!
