White Bean Sumac Salad

I used white haricot beans (but you could use any beans)… these were so creamy and delicious with sweet cherry tomatoes, red onions, black olives, tons of dill, parsley, Aleppo chilli flakes, lemon, olive oil and sumac, finished with micro-herbs.

Ingredients

  • 400g White Haricot Beans, drained and rinsed
  • 1 Red Onion, finely sliced
  • 1 tsp Sumac
  • 20 Cherry Tomatoes
  • 15 Black pitted olives
  • Large handful fresh parsley chopped
  • Large handful Dill finely chopped
  • 1 tsp Aleppo Chilli Pepper flakes
  • 2 tbsp Olive oil
  • 1 Lemon juiced
  • Sea salt
  • Freshly ground black pepper
  • GARNISH: Micro Herbs

Instructions

METHOD

  1. Add the onion and sumac to a mixing bowl and mix well. Set aside for a few minutes for the flavours to develop.
  2. Add all remaining ingredients into the bowl and mix well
  3. Place the salad into your serving dish, decorate with micro herbs and serve immediately
  4. Enjoy!
